MELANZANE ESSICATE AL SOLE

Come le fa la mia ex suocera , lucana:

Spurgare col sale come al solito, pelate..

Tagliare a striscioline come Tagliatelle un po' larghe e seccare al sole.

Scottare in aceto bollente e vino bianco (fifty-fifty o se ti piace piu' forte aumenta l'aceto.. qui e' tutto a gusto personale)

Sgocciolare poco.

Mettere sott'olio di frantoio con aglio e origano.

Usare come antipasto.Va preparato ora, al caldo sole di agosto, e gustato dopo un paio di mesi..
