SPUMINI AL PROSCIUTTO

Ingredienti:

Dosi per 4:

250 g prosciutto cotto
100 g ricotta
100 g mascarpone
limone
sale
5--6 foglie lattuga

Frullare il prosciutto con la ricotta e il mascarpone, insaporite con poche gocce di limone e un pizzico di sale. Mettete il composto in frigo per 2 ore. Lavate e asciugate la lattuga, tagliuzzatela e distribuitela sui piatti. Mettete il composto nell'apposita tasca da pasticcere e distribuitelo in 3--5 mucchietti su ciascun piatto formando degli spumini e servire.
