CARCIOFI FREDDI

Ingredienti:

Dosi per 4:

6 carciofi interi
1 limone
3 uova
60 g burro
olio
olive nere
prezzemolo tritato
sale
Pepe

Pulite i carciofi, strofinateli con Mezzo limone e scottateli in acqua bollente; fateli raffreddare; apriteli a Fiore e conditeli con olio e limone. Lavorate, a parte, il burro fino a farlo diventare cremoso unendo i tuorli delle uova sode passati al setaccio; aggiustate di sale e Pepe, unite il succo di Mezzo limone e mescolete bene. Riempite con il composto ottenuto i carciofi. Guarnite con olive nere e prezzemolo. Mettete in frigo per un'ora prima di servire.
