INSALATA AI CARCIOFI

Ingredienti:

Dosi per 4:

3 carciofi
1 sedano piccolo
1 carota
50 g parmigiano
1.5 limoni
olio
sale
Pepe

Pulire i carciofi, tagliarli a metà e privarli del fieno. Tenerli per 1/2 ora in acqua fredda acidulata con il succo di limone. Mondare il sedano e la carota. Affettare finemente i carciofi, irrorarli con Mezzo limone e salarli. Unire le carote a Julienne e il sedano affettato. Salare, pepare e condire con 4 cucchiai di olio. Cospargere con il parmigiano a scaglie.
