INSALATA DI GINEVRA

Ingredienti:

Dosi per 4:

300 g insalata belga
300 g mele renette
300 g patate lesse
4 cucchiai olio
2 cucchiai aceto
1 cucchiaino Senape
4 pizzichi sale
8--10 noci facoltative

Lessare le patate con la buccia. Intanto pulire l'insalata e tagliarla a pezzi, pulire le mele e farle a fettine. Sbucciare le patate e quando saranno fredde, tagliarle a fettine. Mettere in una ciotola olio, aceto, sale e Senape. Sbattere bene formando un'emulsione con cui condire l'insalata. Aggiungere i gherigli di noce spezzettati.
