CREMA ROVESCIATA

Ingredienti:

Dosi per 6:

1/2 l panna liquida
1 uovo
5 tuorli
150 g zucchero
poche mandorle amare
Cannella
scorza di limone
zucchero per il caramello

Scottare le mandorle in acqua bollente, pelarle e passarle al tritatutto. Sbattere le uova con lo zucchero, unire un po' di Cannella, la scorza di limone grattugiata e le mandorle. Unire la panna. Imburrare uno stampo e farvi caramellare 4 cucchiai di zucchero. Versarvi il composto e cuocere a bagnomaria per 1 ora sul fornelo e per 30' al forno. Sformare freddo.
