SOUFFLE` DOLCE DI PATATE

Ingredienti:

Dosi per 4:

300 g patate sbucciate
80 g burro
4 cucchiai latte caldo
2 cucchiai Miele
130 g zucchero a velo
50 g cacao
100 g farina
1 bicchierino di Brandy
100 g Amaretti
2 uova
sale
1 bustina lievito

Cuocere le patate a vapore con il sale. Schiacciarle e passare il purè sul fuoco. Unire il latte in cui è stato sciolto il lievito, il burro a pezzetti, lo zucchero, la farina, il cacao, il Brandy, il Miele, metà degli Amaretti pestati, le uova sbattute e gli albumi a neve. Versare in stampo imburrato e cosparso con gli Amaretti e cuocere in forno per 40'.
