Le ricette di Pierre

PENNETTE AL LIMONE

Ingredienti per 4 persone

320 g pennette
4dlpanna
40gricotta morbida
80 g ricotta dura grattugiata
2 cipollotti (o 1 cipolla)
2 limoni
1 Lime
q.b. sale
q.b. Pepe
olio (o burro)

Preparazione:

  1. spremere il succo a Mezzo limone e a Mezzo Lime
  2. grattugiare la scorza (tralasciando la parte bianca) del Mezzo limone e Mezzo Lime rimasto
  3. tagliare a Julienne la scorza del secondo limone
  4. affettare i cipollotti (o la cipolla) e in poco olio far appassire
  5. unire la panna ed il burro e la ricotta morbida e amalgamare bene ai cipollotti
  6. padellate le pennette cotte al dente, unire la ricotta grattugiata, le scorze grattuggiate e lasciar riposare per 5 minuti
  7. servire dopo aver guarnito con la Julienne di scorza di limone
