MINESTRA DEL BOSCAIOLO

Ingredienti:

Dosi per 4:

400 g castagne secche
150 g riso
1 l latte
burro
sale

Lavare le castagne e metterle a bagno in acqua tiepida per 12 ore. Scolarle, eliminare le pellicine, metterle in pentola con il latte, una presa di bicarbonato, salare poco e cuocere coperto per 1 ora e mezza. Quindi unire il riso e cuocere per 20' mescolando e bagnando con un po' di latte caldo
se necessario. A cottura ultimata unire una grossa noce di burro e mescolare ancora. Decorare con prezzemolo e portare in tavola.
