GNOCCHETTI AI CAPRINI

Ingredienti:

Dosi per 4:

450 g spinaci lessati e tritati
300 g caprini
2 uova
1 spicchio aglio
2 cucchiai grana grattugiato
2 cucchiai farina
70 g burro
sale

Lessare gli spinaci, farli insaporire in una padella con una noce di burro e l'aglio, metterli in una Terrina, incorporarvi i caprini, il grana, le uova, la farina, far amalgamare e lasciar riposare il composto per circa 1 ora.

Formare degli gnocchetti, cuocerli in acqua bollente salata, scolarli, condirli con il burro fuso e il grana e servire.
