MINESTRA DELICATA DI PISELLI FRESCHI

minestra_delicata_piselli_freschi Ingredienti:

Dosi per 4:

450 g piselli freschi, puliti
3 cipolline
30 g burro
2 cucchiai olio
1 l brodo
2 uova
3 cucchiai parmigiano grattugiato
70 g prosciutto cotto tritato
2 cucchiai panna liquida
sale
Pepe bianco
80 g crostini di pane

Rosolare le cipolline tritate in burro e olio, unire i piselli e portarli a cottura, salare, pepare, versare il brodo e portare a lenta ebollizione. Sbattere le uova con la panna, il parmigiano e il prosciutto. Incorporarvi il brodo caldo con i piselli facendolo scendere a filo Accompagnare con i crostini caldi.
