BOCCONCINI CRISTINA

bocconcini_cristina Ingredienti:

Dosi per 4:

400 g polpa di vitello
30 g burro
olio
Salvia
Rosmarino
Alloro
1 bicchierino cognac
4 cipolle
2 carote
sedano
2 cucchiai farina
sale
Pepe
Noce moscata
Cannella

Rosolare burro, olio e odori. Infarinare i bocconcini. Affettare la verdura. Versare tutto nel condimento, far prendere colore, salare e aggiungere le droghe. Aggiungere poco a poco dell'acqua tiepida, fino a formare un sughetto denso. Cuocere scoperto a fuoco moderato per 1 ora. Irrorare col cognac e cuocere ancora per 1/4 d'ora.
