FARAONA AL LATTE

Ingredienti:

Dosi per 4:

1 faraona di circa 1 kg
4 fette pancetta
30 g burro
olio
1 bicchierino Brandy
1/2 bicchiere marsala
1 bicchiere latte
sale

Tagliate la faraona in 4 pezzi. Mettete io un largo tegame olio e burro, rosolate adagio le fette di pancetta. Unite la faraona appoggiando i quattro pezzi distanti l'uno dall'altro. Fateli rosolare bene, poi aggiungete il Brandy. Fate evaporare e poi unite anche il marsala. Coprite e aggiungete poco per volta il latte, fino a completa cottura.
