ROTOLI DI VITELLO

rotoli_vitello Ingredienti:

Dosi per 4:

8 fette fesa di vitello
8 fette mortadella
2 caprini
30 g olive verdi snocciolate
2 cucchiai pesto
200 g pomodoro
olio
sale

Battere la carne e posare su ogni fetta la mortadella. Lavorare a lungo i caprini con le olive tritate, il pesto e poco sale. Mescolare e suddividere sulle fette di carne. Arrotolarle e fissarle con 2 stecchini. Scaldare un po' d'olio e rosolarvi gli involtini. Unire il pomodoro, sale e cuocere a fuoco dolce per circa 15', bagnando, se occorre, con poca acqua calda.
