SALSA CREMOSA PER CARPACCIO

Ingredienti:

Per 4

100 g Crescenza morbidissima
2 tuorli
olio
1 limone
sale
Pepe bianco

Mettere la Crescenza in una ciotola e con una forchetta lavorarla a lungo fino a che sarà ridotta a una morbida crema (eventualmente passarla al setaccio). Unire i tuorli e mescolarli bene. Insaporire con sale e Pepe. Cominciare a unire l'olio a filo, continuando a mescolare con ritmo uniforme. Quando la salsa tenderà a diventare soda unire un cucchiaio di limone. Servirla con la carne assieme a pomodori e olive.
