BACCALA` IN GUAZZETTO

Ingredienti:

Dosi per 4:

1 kg baccalà piuttosto spesso, già ammollato e tagliato a pezzi
1.5 dl olio
150 g cipolla
800 g polpa di pomodori tritata
30 g prezzemolo tritato
farina
20 g uvetta
20 g pinoli
sale
Pepe

Scaldare 0.5 dl di olio, dorarvi i pezzi di baccalà bene asciutti e infarinati, cuocerli 8' per parte, sgocciolarli e metterli al caldo. Scaldare l'olio rimasto, imbiondirvi la cipolla, unire il pomodoro, Pepe, uvetta, pinoli e sale, se necessario. Continuare la cottura per 15--20', unire al sugo il baccalà e servire.
