SARDE FRITTE

Ingredienti:

Dosi per 4:

16 Sarde freschissime
2 uova
1 ciuffo prezzemolo
1/2 spicchio aglio
farina
pangrattato
aceto
sale
Pepe
olio

Pulire le Sarde, eliminare le teste e le spine centrali senza dividere i filetti. Lavarle e tenerle per 30' coperte di acqua acidulata con 2 cucchiai di aceto. Sbattere le uova e incorporare un trito di aglio e prezzemolo, sale e Pepe Scolarle, asciugarle, passarle in un velo di farina, poi nelle uova e infine nel pangrattato. Friggerle in abbondante olio. Scolarle e servirle caldissime.
