TROTE ALLO SPUMANTE

Ingredienti:
Dosi per 4:
2 trote salmonate di 450 gr ciascuna
1/2 bottiglia spumante secco
1 carota
1 cipolla
prezzemolo
timo
1 foglia Alloro
burro
sale
Pepe

Soffriggere a fuoco dolce le trote mondate con una noce di burro e un trito di carota, cipolla e prezzemolo. Bagnare con lo spumante, insaporire con sale, Pepe, timo e Alloro. Quando il liquido bolle trasferire il recipiente in forno a 240o e cuocere per 10'. Pulire le trote, sistemare i filetti in un piatto e coprire con il liquido di cottura passato al colino.
