OMELETTE MONT-S. MICHEL

omelette_mont_s_michel Ingredienti:

Dosi per 4:

10 uova
3 cucchiai panna liquida
2 cucchiai parmigiano grattugiato
20 g burro
1 cucchiaino burro fuso
20 g strutto
sale
Pepe

Dividere i tuorli dagli albumi e sbatterli con la panna. A parte montare gli albumi a neve e unirli a cucchiaiate ai tuorli, salare e pepare. Versare il composto in una padella di ferro con il burro e lo strutto caldissimi. Quando l'omelette è rappresa e gonfia ripiegarla su se stessa e ungerla con il burro fuso. Spolverizzare con il parmigiano e servire.
