UOVA ALL'ERBETTA

Dosi per 4:
4 uova
500gerbette
200gricotta
4cucchiaiparmigiano grattugiato
3cucchiailatte
pangrattato
burro
sale

Lessate le erbette per 15 minuti in pochissima acqua. Scolatele, rimettetele in casseruola e, a fiamma bassa, far evaporare la restante acqua. Tritatele e incorporatevi la ricotta,il latte, 2 cucchiai di parmigiano e il sale. Imburrate e cospargete di pangrattato una teglia: disponetevi l'impasto livellandolo, sgusciatevi sopra le uova, unite il rimanente parmigiano e infornate 8' a 200'C.
