UOVA CON MELANZANE

Dosi per 4:
600gmelanzane
300gpomodori pelati
4uova
10 cucchiaiolio d'oliva
2cucchiaiPecorinograttugiato

Tagliate a dadini le melanzane e fate perdere il siero in un colapasta dopo averle cosparse di sale. Sciacquatele, asciugatele e friggetele nell'olio. Nello stesso condimento,dopo aver tolto le melanzane, unite i pomodori e fateli consumare. Aggiungete di nuovo le melanzane, salate, pepate e dopo pochi minuti unite le uova sbattute col Pecorino e un po' di sale. Servitele appena rapprese.
