SOUFFLE' DI FAGIOLINI

Ingredienti:
Dosi per 4:
500 g fagiolini
1 cucchiaio farina bianca
3 uova
40 g burro
2 cucchiai parmigiano grattugiato
1.5 bicchieri latte
sale

Lessare i fagiolini. Preparare una Besciamella densa con burro, latte e farina. Unirla ai fagiolini e passare al setaccio. Aggiustare di sale e condire con il parmigiano. Far riposare il composto e quando sarà freddo incorporare prima i tuorli, quindi gli albumi montati a neve ferma, mescolando. Versare il composto in una pirofila imburrata e cuocere nel forno già caldo a 170o circa.
